Apples to use, sweet taste in mind…Muffins!
Made 12 of these today, I reduced the sugar contents from the original recipe and they were still very sweet, and went down well. They are a keeper! Here is what I needed:
Ingredients:
3 small apples, cored and chopped in small chunks
200 g sieved flour
1 egg, beaten
90 mL milk
80 mL vegetable oil
80 g sugar
40 g dark mascovado sugar/brown sugar
2 and 1/2 tea spoons baking soda
1/2 tea spoon of salt
a tea spoon of vanilla extract
Oven, 12 muffin case, food processor, muffins tray, spoons.
How to proceed:
Pre heat the oven at 200 oC.
Mix all the dry ingredients in the food processor, give a pulse.
Add mild oil, egg and vanilla extract. The mixture will be a little lumpy.
Add the chunks of apple, and mix a little until well combined.
Spoon out the dough into the 12 cases equally.
Cook in the oven for 20 minutes.
Cool on a rack, ready to go!
