I use this recipe a lot, to recycle bananas of course, and to add to lunch boxes, or as a quick fix for afternoon snack at the week end.

Ingredients:

3 ripe bananas (4 if they are small)

1/2 cup of sugar

2 table spoons of soft (or just melted) butter

1 1/2 cup of flour

2 table spoons of baking powder

Optional: 1 cup of nuts

Bread tin  or muffin cases

Recipe:

Preheat the oven at 180° C

Mash the bananas with the sugar in mixing bowl

Add the melted butter

Add the sifted flour

Mix until well combined. I usually mash the bananas and sugar with  fork, then do all the rest with the food processor.

Pour dough in a bread tin/mould and cook for 45 minutes. Alternatively add to muffin cases and cook for 25 minutes.
