I found this recipe while browsing on the net for new ideas, and adapted a bit the quantities. This made about 16 muffins for me.
1 tsp olive oil
3 spring onions, finely sliced
3 rashers bacon, finely chopped
¼ small red Pepper, finely diced
1¼ cups self raising our, sifted
½ cup milk
1 egg, lightly beaten
45g butter, melted
220g (about half a can) of baked beans
½ cup grated cheese
Add the olive oil in a large pan, add the finely chopped vegetables, then bacon, on medium heat. Keep cooking, mixing regularly, until the bacon is well done and vegetable soft enough.
Preheat the oven at 180°C.
Sieve the flour in a large bowl (I use a kitchen food processor to do all of, it was done in no time!).
Add the milk, then egg, then melted butter, then beans while mixing with the robot.
Add the bacon/vegetable mix to the dough, and finally add the cheese.Put muffin cases into muffin mould tray, and fill up 2/3 with dough.
Cook for 15 minutes, you may have to add a little more if the dough was very wet.
Let cool on a baking rack. I let them dry , then put in an air tight container. I make sure no condensation is accumulating on the inside of the box.
